HISTORY OF THE NIFLETTE
Niflettes are a pastry specialty originating from the town of Provins, in Seine-et-Marne. Sold by the dozen, these small pastries conceal a voluptuous pastry cream subtly flavored with orange blossom under their puff pastry.
No need to say more to melt under this delicious dessert…
A local and historical tradition, in the Middle Ages and during All Saints' Day, they were distributed to orphans leaving cemeteries. The word niflette originates from the Latin injunction "Ne flete!", meaning "don't cry." Today, the pastry chefs of Provins maintain the tradition and still offer this little treat at this time of year.
On the program: a niflette village, workshops and demonstrations, activities for the whole family, a gourmet market, live music, and, of course, a niflette sale!
Niflette will also be the queen of desserts in the medieval city's restaurants!
This event is organized by the City of Provins, in partnership with the Provinois Community of Communes, the Île-de-France - Seine-et-Marne Chamber of Trades and Crafts, and the Provinois Union of Commerce.
