The "Niflettes" are a bakery speciality from Provins, in Seine-et-Marne. Sold by dozen, this little pastry hide a voluptuous pastry cream under their puff pastry, subtly flavoured with orange blossom.
A local and historic tradition, in Middle Age and during All Saint's Day, they were given to orphans as they left the cemetery. The word "Niflette" finds his origin in the Latin injunction "Ne flete !", it means, "Ne pleure pas" (Don't cry). Today, the bakers of Provins keep the tradition and suggest this little sweetness during the same period.
After the great success of the first and second edition, the famous Mercotte has agreed to return as the godmother of the celebration. French food critic, blogger and TV host, she is known for her participation as a jury in the French TV M6 show "Le Meilleur Pâtissier" and for her blog "La cuisine de Mercotte"!
THE GREAT HOURS OF THE CELEBRATION:
> Village of the "niflette" - continuous workshops and demonstrations by the bakers of Provins. All children could make a niflette.
> Gourmet market with about thirty exhibitors offering products from the
> 12.30 p.m.: official inauguration of the Festival.
> New: go on board the "accrovoile"!
An animation for the whole family from 5 years old which will make you become a sailor and climb safely in the reconstituted masts of a sailing boat.
Free initiation all day with a lunch break at noon for the crew to rest.
> Jazz atmosphere with several bands.
GREAT GAME-COMPETITION FOR THE BEST NIFLETTE
Contest (full rules soon available) reserved for children from 6 to 12 years old.
> From 10 a.m. to 11 a.m.: meet at the town hall of Provins for registration and deposit of niflettes, at the rate of 6 niflettes per child.
> The participant must be present 15 minutes before the winner is chosen by the jury at 3.30 p.m.

An event organized by the town of Provins, in partnership with the Communauté de Communes du Provinois, the Chambre des Métiers et de l'Artisanat of Seine-et-Marne and the Union du Commerce Provinois.
